Eat a Healthy Lunch Everyday for a Week: Sunday


Eri's Recipe: Vegan Friendly Lemon Pasta (GF)


For this week, Colin and I are going to eat a healthy lunch everyday. Usually it will be separated, but since it is Sunday and we are eating together--here is our collaborated lunch today.

For this challenge we have 2 rules.

1. We can’t spend any money on food this week.
2. We have to make a healthy meal with food we already have in our homes.

Here are the ingredients:

Mixed Vegetables
Fettuccine Pasta
Lemon Juice
Soy Sauce
Ground Cayenne Red Pepper
Garlic Squeeze
Coconut oil

Directions:

1. Boil the pasta to al dente. Drain the pasta and put it back into the pot.
2. Add a touch of coconut oil and add the mixed vegetables.


3. Add a small touch of Cayenne pepper, soy sauce and a small squeeze of Garlic. Add more Cayenne if you'd like more a kick. I added some more Cayenne after mixing in these ingredients the first time.


4. Add the lemon juice towards the end, as much as desired.

Very easy recipe that is Vegan and Gluten Free. I personally used gluten free soy sauce. If you use regular soy sauce, there will be some wheat included in the recipe.

See you tomorrow.  Colin and I will have separate meals. I'll keep the days separated to avoid overly long entries.
