Eat a healthy lunch everyday for a week: Wednesday

Happy Wednesday!

Eri’s Meal:

Today I made Curried Quinoa with an egg on top. (GF/Dairy Free)



Ingredients:
Red Quinoa
Curry Powder
Turmeric
Half of an onion
Vegetable Boullion
Oolong Tea
Egg

Quinoa Directions:

1. Much like my quinoa recipe yesterday, wash and add the quinoa to a pot.
2. Add water, curry powder, turmeric, and one cube of vegetable boullion.
3. When the water content is about a quarter left- add chopped yellow onion.



Egg Directions:

1. Spread some sesame oil on a nonstick pan.
2. Let the sesame oil heat up first, then add the egg.
3. After about 2 minutes- add some oolong tea and cover it with foil. Water is okay if you’d like. 
4. The egg should be done once the water is gone. 
Simply add the egg on top of the quinoa and enjoy!







Colin’s Meal was another chicken salad. This time with Lettuce instead of Cabbage.
